Glazed Carrots

I needed another vegetable dish to round out tonight's dinner and this looked pleasingly simple. I halved the sugar and salt, but I think I probably should've halved the butter as well. It was fine, but I think I would've preferred a higher carrot:glaze ratio.


Glazed Carrots

Slightly adapted from The Modern Proper

Ingredients

  • 2 Tbsp. unsalted butter
  • 900g carrots, cut into sticks
  • 2 Tbsp. brown sugar
  • 1/4 tsp. coarse sea salt, ground
  • 1/2 tsp. black peppercorns, ground

Directions

  1. Melt butter over medium heat.
  2. Add carrots and cook for 10 minutes, stirring occasionally.
  3. Add sugar and cook for another 2 minutes.
  4. Add salt and pepper and cook for 1 minute more.
