Sourdough Discard Savoury Pancakes

This started out as "pan-fry a bit of sourdough discard to use it up and get a tasty flatbread to eat", and gradually evolved into a full-on breakfast. It's reasonably easy to make and we pretty much always have the materials for it, so it's a good way to use up some sourdough and get a filling breakfast out of it.

Ingredients

  • oil
  • 1 green onion, sliced
  • large scoop sourdough discard
  • 1 large egg
  • laoganma
  • mayo
  • cucumber and/or carrot, julienned

Directions

  1. In a nonstick skillet, heat some oil to medium-high heat.
  2. Add green onions and fry briefly, <1 minute.
  3. Pour sourdough discard overtop. Cook until golden brown on both sides, flipping once the first side is done.
  4. Remove from pan and use the remaining oil to fry an egg.
  5. Top with laoganma, mayo, julienned vegetables, and egg.
