Ensaladang Pipino (Cucumber Salad)

I've always enjoyed cucumber slices tossed with vinegar and a little salt and pepper. This salad takes that idea to the next level! My only regret is not getting more cucumbers so I could make a double batch.


Ensaladang Pipino

Slightly adapted from Kawaling Pinoy

Ingredients

  • 1/2 c. vinegar (preferably cane or coconut vinegar)
  • 2 Tbsp. fish sauce
  • 1 tsp. sesame oil
  • 1 Tbsp. sugar
  • 1/2 tsp. coarse sea salt, ground
  • 1 fresh red Thai chili, minced
  • 2-3 black peppercorns, crushed
  • 2 large cucumbers, halved and thinly sliced
  • 1/2 small red onion, halved and thinly sliced

Directions

  1. Whisk together vinegar, fish sauce, oil, sugar, salt, chili, and pepper in a bowl.
  2. Add cucumber and onion and toss to combine.
  3. Cover and chill until ready to eat.
