This came out surprisingly tasty! I was expecting it to be passable, but nothing special. But it was actually delicious! I loved this!
Spicy Simmered Eggs with Kale

Ingredients
- 1-2 Tbsp. unsalted butter
- 4 green onions, sliced
- 2-3 cloves garlic, minced
- 2 bunches black kale, chopped
- 1 c. chicken or vegetable broth
- 1/8 tsp. coarse sea salt
- 1/4 tsp. black peppercorns, ground
- zest and juice of 1 lemon
- 4-6 eggs
- 1/4 tsp. red chile flakes
Directions
- Melt the butter over medium heat.
- Add the green onions and garlic and cook for a minute or two.
- Add half the kale and cook until wilted (~2 minutes).
- Repeat with remaining kale.
- Add broth, salt, pepper, and lemon zest.
- Reduce heat and simmer until kale softens (~6 minutes).
- Stir in lemon juice.
- Make a well for each egg.
- Crack the eggs into the wells and sprinkle with salt and pepper.
- Cover and cook over medium-low heat until eggs reach desired doneness (5-8 minutes).
- Sprinkle with chile flakes and serve.
