Thenga Paal Kozhi (Chicken with Red Chiles and Coconut Milk)

We were tragically out of cilantro when making this and had to do our best with parsley, which isn't really similar at all, but it was still delicious. It requires some lead time because of the marinade and long simmering time, but is pretty low-effort to actually make.

Thenga Paal Kozhi

From 660 Curries by Raghavan Iyer (p. 139)

Ingredients

  • ¼ C white vinegar
  • 1 tsp salt
  • ¼ tsp ground turmeric
  • 1 small red onion, coarsely chopped
  • 6 medium-sized cloves garlic
  • 3 dried red Thai or cayenne chiles
  • 1 whole chicken, skin removed, cut into eighths; or ~1.5kg bone-in chicken breasts and/or thighs
  • 2 tbsp canola oil
  • ¾ C coconut milk
  • 1 ~400mL tin diced tomato
  • ¼ C finely chopped fresh cilantro

Directions

  1. Puree vinegar, salt, turmeric, onion, garlic, and chiles in a blender.
  2. Coat the chicken pieces in the marinade and refrigerate, covered, for 30-120 minutes. Do not marinate overnight.
  3. Once marinated, heat the oil in a large skillet over medium-high heat.
  4. Add the chicken and marinade, meat side down. Cook until some of the marinade boils off and the meat is browned, 5-7 minutes.
  5. Flip the chicken and brown the other side.
  6. Pour in the coconut milk and tomatoes. Lift the chicken slightly to let it coat the underside and stir together.
  7. Bring to a boil, then reduce heat to medium-low and simmer, covered, basting the chicken every 3-4 minutes, until cooked through.
  8. Remove and buffer the chicken. Stir cilantro into the sauce and boil uncovered until it thickens to the desired consistency.
  9. Serve the chicken bone-in or disassembled, as you prefer, covered or tossed with the sauce.

Beef & Onion Stir-Fry

Aaron & Claire describe this as "easy" and "so simple", and as a "15-minute" recipe. I submit that this is only the case if you don't count any of the time needed to prep the sauces and the ingredients; once the mise-en-place is done, yes, it comes together very quickly and easily, but the mise-en-place is a lot! I can't argue with the results, though; it's delicious.

Compared to the original recipe, this uses more carrot, and consistently chooses shaoxing wine over mirin where the choice is given, but is otherwise unaltered.

Beef & Onion Stir-Fry

Aaron and Claire

Ingredients

  • Marinade
    • 1 tbsp oil
    • 1 tbsp soy sauce
    • 1 tbsp shaoxing wine
    • 1 tbsp cornstarch
    • ½ tsp baking soda
    • ¼ tsp white pepper, ground
  • Sauce
    • 5 tbsp water
    • 2 tbsp oyster sauce
    • 1 tbsp light soy sauce
    • 1 tbsp shaoxing wine
    • 1 tbsp cornstarch
    • 1 tbsp sugar
    • 1 tsp chicken stock powder
    • ½ tsp dark soy sauce
  • Stir-Fry
    • 500g chuck flap tail, steak, or similar beef, cut into thin strips
    • 1+1 tbsp neutral oil, divided
    • 2 large yellow onions, sliced
    • 4 green onions, sliced, whites and greens divided
    • 3 tbsp garlic paste
    • 2 tsp ginger paste
    • 1 carrot, sliced
    • 1 tsp toasted sesame oil

Directions

  1. Whisk together all marinade ingredients in a medium bowl.
  2. Add the beef and toss thoroughly to coat. Marinate in the fridge for at least ten minutes.
  3. Whisk together all sauce ingredients and set aside.
  4. Do all mise-en-place before proceeding.
  5. Heat the wok and add 1 tbsp of oil.
  6. Add the beef in its marinade and stir-fry until comfortably seared all over. Remove and buffer.
  7. Add the other tbsp of oil.
  8. Add the onions and let them sit for 1-2 minutes until they start to char and soften.
  9. Add garlic, ginger, and green onion whites. Stir-fry until fragrant, <1 minute.
  10. Add beef, carrots, and sauce. Stir-fry until slightly thickened and heated through, 1-2 minutes.
  11. Remove from heat and toss with sesame oil and green onion greens.
  12. Serve over rice.

Mayak Eggs (Korean Marinated Soy Sauce Eggs)

I was originally thinking of doing a rolled omelette to go with our Korean dinner. But, having taken a closer look at the recipes, I decided that these marinated eggs would actually work better. Both because I could prepare them ahead of time and because the marinade is useful in a variety of other recipes.

Mayak Eggs

From https://aaronandclaire.com/korean-marinated-eggs-mayak-eggs/

Ingredients

  • 1/2 c. soy sauce
  • 1/2 c. water
  • 2 Tbsp. sugar
  • 1 Tbsp. white vinegar
  • 1 Tbsp. toasted sesame seeds
  • 1/2 Tbsp. toasted sesame oil
  • 1/4 tsp. black pepper
  • 1/4 yellow onion, chopped
  • 1 Cheongyang chili pepper (or serrano, jalapeno, etc.), thinly sliced (optional)
  • 1 mild red chili, thinly sliced (optional)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 6-8 large eggs, hard- or soft-boiled

Directions

  1. combine the soy sauce, water, sugar, vinegar, sesame seeds, sesame oil, and black pepper. Mix well.
  2. Add the onion, chilies (if using), green onion, and garlic and stir to combine.
  3. Bring 6 cups of water to a boil. Reduce heat to low and gently add the eggs. Stir gently to center the yolks. Cook for 7 minutes for soft-boiled eggs.
  4. Transfer the eggs to an ice bath to cool completely. Once cooled, peel the eggs.
  5. Add the peeled eggs to the marinade and gently stir to coat. Ensure they are fully submerged. If needed, stir halfway through marinating. Cover and refrigerate for at least 6 hours or overnight.
  6. To serve, place a marinated egg on top of hot steamed rice, drizzle with extra marinade, and add a touch of sesame oil. Enjoy!

General Purpose Chicken Marinade

I based this on a recipe I found online, but tweaked it a bit to serve my purposes. I've included a proprotional recipe as well as one that uses absolute measurments. I like the proportional/ratio-based one because it's easy to scale for any amount of chicken. But if you prefer just having a set list of measurements, that is also included below.

General Purpose Chicken Marinade

Adapted from Mom on Time Out

Ingredients (Proportional)

  • 1 part white peppercorns, ground
  • 2 parts garlic powder
  • 2 parts Italian seasoning
  • 6 parts Dijon or Roman mustard
  • 12 parts Worcestershire sauce
  • 24 parts light (regular) soy sauce
  • 24 parts olive oil
  • 24 parts balsamic vinegar

Ingredients (Absolute)

  • 1/8 tsp. white peppercorns, ground
  • 1/4 tsp. garlic powder
  • 1/4 tsp. Italian seasoning
  • 3/4 tsp. Dijon or Roman mustard
  • 1/2 Tbsp. Worcestershire sauce
  • 1 Tbsp. light (regular) soy sauce
  • 1 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar

Directions

  1. Combine all ingredients and mix well.
  2. Add your chicken, cover, and chill for at least 30 minutes.
  3. If possible, mixt the chicken around once or twice during marinating time.
  4. Cook your chicken as desired (grill, bake, fry, etc.)
