Ingredients
- Sauce
 - 75mL packed brown sugar
 - 60mL soy sauce
 - 60mL mirin
 - 30mL rice or cane vinegar
 - 30mL water
 - 10mL cornstarch
 - 1mL red pepper flakes
 - ~500g boneless strip steak or similar
 - black pepper
 - 2 scallions, thinly sliced
 
Procedure
- Whisk together all sauce ingredients in a bowl.
 - Season steak with pepper.
 - Cook steak in an oiled skillet over medium heat until the outside is well browned and the inside reads 125°F, ~medium rare, about 5 minutes/side.
 - Reduce heat to medium low and add sauce to skillet. Deglaze, bring to a simmer, and cook until sauce thickens.
 - Remove from heat. Remove steak to cutting board, let rest 5 minutes, then slice thinly.
 - Serve over rice, top with sauce and scallions.
