I was very surprised at how short and simple the ingredients list for this garam masala were. Not everything has to be bottle masala, of course, but I'm used to most blends containing at least five or six different spices. This one has just three!
Bangala Garam Masala
From 660 Curries by Raghavan Iyer
Ingredients
- 1 tsp. whole cloves
- 1 tsp. cardamom seeds from green pods
- 4 (3") cinnamon sticks, broken into smaller pieces
Directions
- Combine all ingredients and grind in a spice/coffee grinder until the mixture reaches a coarsely ground black pepper consistency. (This may take several passes and the cloves and cinnamon are fairly difficult to break down.)
