Buckwheat Pancakes with Apples and Cottage Cheese
Slightly adapted from Weight Watchers
Ingredients
- 4 apples, sliced
- 1 tsp. cinnamon sugar
- 1/2 c. whole wheat flour
- 1/2 c. buckwehat flour
- 3/4 tsp. baking powder
- 3/4 c. milk
- 1/2 c. buttermilk
- 1 large egg
- 1 c. cottage cheese
- 1-2 Tbsp. raisins, chopped
- 1/4 tsp. ground cinnamon
- 1/2 tsp. stevia
- 3-4 Tbsp. maple syrup
Directions
- Preheat oven to 200°C (400°F).
- Place the apples in a baking dish and sprinkle with cinnamon sugar and bake at 200°C (400°F) for 30 minutes.
- Combine flours and sift in baking powder.
- In a large measuring cup, combine the milk, buttermilk, and egg and mix well.
- Pour the wet ingredients into the dry and whisk to combine.
- Heat a pan or tawa over medium heat and grease lightly.
- Use ~1/4 c. of batter per pancake and cook until browned on both sides and heated through.
- Mix the raisins, cinnamon, and stevia into the cottage cheese.
- Top each pancake with apples, cottage cheese, and maple syrup.
