Just a quick tomato sauce. It can be either chunky or smooth depending on whether or not you purée it after cooking.
Pizza Sauce
Slightly adapted from Laurel's Kitchen Bread Book
Ingredients
- 2 Tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp. dried oregano
- 1/4 tsp. black pepper
- 1/2 tsp. coarse sea salt
- 6 Tbsp. tomato paste
- 1 1/3 c. canned diced tomatoes
- 2 tsp. fresh basil, chopped
Directions
- Heat olive oil over medium heat.
- Add onion and cook for 2-4 minutes.
- Add garlic and cook for another 1-2 minutes.
- Add oregano, pepper, and salt and cook for a further 30 seconds or so.
- Add tomato paste and cook for another minute.
- Add tomatoes, bring to a boil, then reduce heat and simmer for 5 minutes.
- Stir in basil and allow to cool.
- Purée in blender if a smooth sauce is desired.
This almost, but not quite, uses up a tin of tomato paste. If you don't have a plan to use up the remaining few tablespoons of paste, it's ok to just use the whole tin.
