Edmonds "white sauce" recipe is extremely versatile. Aside from the basic roux-based dairy sauce it can be turned into half a dozen other variants using the same base. The cheese sauce simply involves adding a bit of grated Cheddar to the finished sauce.
Cheese Sauce

Ingredients
- 2 Tbsp. salted butter
- 2 Tbsp. flour (any type)
- 1 c. milk, warmed
- salt and pepper
- 1/2 c. grated Cheddar
Directions
- Melt the butter over medium heat.
- Stir in the flour and cook until frothy.
- Remove from heat and gradually stir in the milk.
- Return to heat and cook until sauce boils and thickens.
- Cook for another 2 minutes.
- Stir in cheese and season with salt and pepper to taste.
