This started out as "pan-fry a bit of sourdough discard to use it up and get a tasty flatbread to eat", and gradually evolved into a full-on breakfast. It's reasonably easy to make and we pretty much always have the materials for it, so it's a good way to use up some sourdough and get a filling breakfast out of it.
Sourdough Discard Savoury Pancakes

Ingredients
- oil
- 1 green onion, sliced
- large scoop sourdough discard
- 1 large egg
- laoganma
- mayo
- cucumber and/or carrot, julienned
Directions
- In a nonstick skillet, heat some oil to medium-high heat.
- Add green onions and fry briefly, <1 minute.
- Pour sourdough discard overtop. Cook until golden brown on both sides, flipping once the first side is done.
- Remove from pan and use the remaining oil to fry an egg.
- Top with laoganma, mayo, julienned vegetables, and egg.
