Ingredients
- 64mL buttermilk
- 30mL lime juice
- 15mL olive oil
- 5mL sugar
- salt and pepper
- 1 ripe avocado, peeled, pitted, and coarsely chopped
- 1 (~1kg) rotisserie chicken, meat shredded, skin and bones discarded
- 8 slices sandwich bread, toasted
- 1 head Bibb lettuce, leaves separated
- 2 tomatoes, thinly sliced
Procedure
- Combine buttermilk, lime juice, sugar, and 2.5mL each salt and pepper in a bowl.
- Add avocado and mash with a fork or masher.
- Stir in chicken. Salt and pepper to taste.
- Assemble sandwiches using toast, lettuce, tomato, and a generous portion of salad for each sandwich.
