Blueberry Buttermilk Waffles
From Waffles: Sweet, Savory, Simple
Ingredients
- 280g + 2 tsp. all-purpose flour, divided
- 1/4 c. sugar
- 1/2 tsp. coarse sea salt, ground
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 2 1/3 c. buttermilk
- 2 large eggs
- 3/4 tsp. lemon zest
- 1/2 c. unsalted butter, melted
- 2 c. frozen wild blueberries1
Directions
- Preheat waffle iron.
- Combine 280g of the flour with the sugar, and salt.
- Sift in the baking powdre and baking soda and mix well.
- In a large measuring cup, beat the buttermilk with the eggs and lemon zest.
- Slowly beat in the melted butter.
- Pour the wet ingredients into the dry and wisk until combined.
- Toss the frozen blueberries with the remaining 2 tsp. of flour.
- Add the blueberries to the batter and give a couple strokes with a spatula to combine.
- Pour a portion of batter into the preheated waffle iron and cook according to manufacturer's directions. Repeat until all batter has been used.
- Serve with maple syrup, compound butter, jam, fresh fruit, and/or fruit compote.
1 Cultivated blueberries are too large and have a less pronounced flavour. Back
