I'm not sure this really counts as a recipe. It's only one ingredient and the procedure is very simple. Toasted chickpea flour comes up in quite a few curries though, so it's worth having the procedure written down. Mostly it just requires patience.
Bhuna Hua Besan

Ingredient
- 1 c. chickpea flour (besan)
Directions
- Preheat a large pan over medium heat.
- Add flour and toast it, stirring constantly with a spatula, until flour turns reddish-brown (15-20 minutes). Do not rush it. Do not increase the heat. Just stir.
- Once flour has achieved its toasted reddish-brown colour and smells nutty, transfer to a plate to cool.
- Store unused portions in an airtight container in the fridge.
